” Black as the devil, hot as hell, pure as an angel, sweet as love. ” – Charles Maurice de Talleyrand
METHOD TO PREPARE

- Prepare a fine decoction with Urban Beans Coffee , Rum & Water. Whisk this well and resist the temptation to lick the spoon. (Rum is optional)
- Take a nice dollop of whipping cream (double cream) in a bowl and whisk it with a regular whisk of an electric whisk till it starts to thicken.
- Once the cream starts to thicken add the powdered sugar, vanilla essence and Mascarpone Cheese and whisk it further till you reach soft peaks consistency.
- Trim the sides and top of the sponge cake. Then cut the sponge horizontally into approximately 1.5 to 2 cm slices. (Will require 2 pieces of the slice minimum.)
- Take one slice of the sponge and soak in the Coffee decoction. Place it in a glass pyrex dish. Or layer it and gently pour the decoction over the sponge cake.
- Now layer the sponge with the cream & cheese mixture. Spreading it evenly on the sponge. Again soak another slice of sponge in coffee decoction and place it over the cream mixture in the dish. Again spread the cream mixture over the sponge. You can have as many layers you want. Only top last layer should be of cream mixture.
- Cover the top layer by dusting cocoa powder over it through a strainer. Cool it for at least 20 min.
- Cut into pieces and serve it cool.
